Thanksgiving Stuffing
It’s been a long time since I traveled home to Chicago to see my family for Thanksgiving. The break is too short to make the 10-hour drive both ways and still have quality time to spend up there.
And the alternative to driving is flying into the world’s busiest airport with a family of five during the busiest air travel time of the year, only to have to rent a small bus to accommodate our huge clan. No, thank you.
So, in order to combat my feelings of homesickness at Thanksgiving, I always make sure to include my mom’s recipe for stuffing at our holiday meal. If I can’t travel to my family for the holiday, at least I can bring a bit of our family tradition to Joplin.
This recipe uses Stove Top Stuffing as a shortcut for the base. When I did my Thanksgiving grocery shopping yesterday, I noticed that the turkey flavored stuffing was sold out. I hunted down a stocker and begged her to check to see if there were more boxes in the back. Thankfully, there were.
I proceeded to wait no less than 20 minutes for the stocker to locate these two boxes on a hard-to-reach top shelf in the back storeroom and bring them to me. Did I get impatient or upset? No. This stuffing is worth it.
What gives this recipe a made-from-scratch flavor is the addition of fresh vegetables and spices. Now, don’t be tempted to omit the sugar, because that is the subtle ingredient that completes this recipe and makes it so addicting.

- 1/3 cup butter
- 1 tsp salt
- 2 tsp dried basil
- 1/2 tsp ground pepper
- 1 cup celery sliced
- 1 cup green pepper cut into strips
- 1/2 cup onion chopped
- 2 cups Stove Top Turkey Stuffing mix (2 boxes)
- 6-8 tomatoes cut into wedges (adjust the amount depending on your taste)
- 2 tsp sugar
Ingredients

- Preheat oven to 350 degrees.
- Prepare stuffing according to directions; set aside.
- Melt butter in a large, heavy skillet; add seasonings.
- Over medium heat, saute celery, green pepper and onion until tender.
- Add stuffing and toss.
- Add tomatoes and sugar; toss gently.
- Cover and cook 10-12 minutes.
- Transfer to an ovenproof dish and bake 30 minutes (you can also keep it on the stovetop).
