Saltine Cracker English Toffee

Saltine Cracker English Toffee sounds weird, I know. But, trust me, it is delicious. The crackers add a touch of salt, which contrasts nicely with the buttery sweet toffee taste. What’s even better is that it is so simple and quick to make.

Here are some tips for this recipe:

The original recipe calls for peanuts to be sprinkled on top. My daughter is allergic to peanuts and I don’t have them in the house, so I used almonds instead (which tasted good, too). I also made a batch without any nuts at all and used sprinkles for decoration.

Make sure the toffee is thoroughly chilled before breaking it into bite-sized pieces, otherwise the cracker part will crumble and separate from the chocolate, making an ugly mess. I know this because I’ve tried to hurry the process and found that it is best to wait.

I like to keep the toffee chilled even after I break it into bite-sized pieces because it’s nice and crunchy this way. Just remove it from the fridge a few minutes before serving.

Instructions
  1. Preheat oven to 400 degrees.
  2. Line a large jelly roll pan (15x10) with aluminum foil and spray with non-stick cooking spray. Lay the crackers evenly on the pan, making sure they touch each other.
  3. In a medium saucepan, melt the butter and brown sugar over medium heat. Bring to a boil and let boil 3 minutes (without stirring).
  4. Pour the hot brown sugar mixture evenly over the crackers. Bake in preheated oven 5-7 minutes.
  5. Remove the pan from the oven and sprinkle the chocolate chips evenly across the top. Let them melt about 5 minutes and then use a spatula to spread the chocolate evenly across the top like frosting.
  6. Sprinkle chopped nuts over the chocolate (optional)
  7. Cool completely (at least an hour) and break into bite-sized pieces.
  8. I store mine in the fridge in order to keep it crisp, then remove it a few minutes prior to serving.
