Saltine Cracker English Toffee
Living Life to The Fullest!
I love seeking out new experiences and finding places off the beaten path. I started
Joplin MO Life in August 2013 as a way to share my discoveries with others in the Joplin community so that they can learn about the resources that exist right in their own backyards.
I have worked in education and event planning, and have always loved to write. I hold a master's degree in journalism from the University of Oklahoma and a bachelor's degree in marketing from Tulane University.

Saltine Cracker English Toffee
Sweet toffee with a touch of salt. From sixsistersstuff.com.
Instructions
Preheat oven to 400 degrees.
Line a large jelly roll pan (15x10) with aluminum foil and spray with non-stick cooking spray. Lay the crackers evenly on the pan, making sure they touch each other.
In a medium saucepan, melt the butter and brown sugar over medium heat. Bring to a boil and let boil 3 minutes (without stirring).
Pour the hot brown sugar mixture evenly over the crackers. Bake in preheated oven 5-7 minutes.
Remove the pan from the oven and sprinkle the chocolate chips evenly across the top. Let them melt about 5 minutes and then use a spatula to spread the chocolate evenly across the top like frosting.
Sprinkle chopped nuts over the chocolate (optional)
Cool completely (at least an hour) and break into bite-sized pieces.
I store mine in the fridge in order to keep it crisp, then remove it a few minutes prior to serving.
