Pumpkin Chocolate Chip Muffins

When the air feels crisp and the leaves start changing colors, my kids start pleading (relentlessly) for me to make Pumpkin Chocolate Chip Muffins.

Consistently moist and delicious, these muffins are packed with vitamins (and sugar, but let’s focus on the vitamins).

The one can of pumpkin that this recipe calls for contains 8% of the recommended daily value of Vitamin C and 280% (yes, 280%!) of Vitamin A. There’s also some calcium, iron and folic acid in the pumpkin, too. Go, gourds!

Back to the sugar – this recipe calls for a whopping 2 1/2 cups of it. If you want to make these muffins even healthier, you can forgo the sugar and use a substitute such as Splenda instead. I’ve made this recipe with sugar and with Splenda and the muffins were delicious both ways.

Pumpkin Chocolate Chip Muffins

(serves 24)

Ingredients

3 1/2 c flour

1 1/2 tsp salt

2 tsp baking soda

2 tsp cinnamon

2 1/2 c sugar

1 c oil

4 eggs

2/3 c water

1 (15 oz) can pumpkin

1 c chocolate chips

Directions

1. Preheat oven to 350 degrees. Grease muffin tin or line with muffin liners.

2. Combine dry ingredients in a large bowl.

3. Make a well in the center and add the wet ingredients. Mix until smooth.

4. Add chips. Stir to combine.

5. Pour into prepared tin. Bake 20 minutes or until done.
