Judy’s Spinach Artichoke Dip
What is it about spinach artichoke dip that makes it so delicious?
Not many people claim to be fans of plain spinach or artichokes, but combine the two and add some rich creaminess and you’ve got an addictive savory dish.
My standby recipe for spinach artichoke dip comes from my sister Judy and I’ve been making it for years. It’s a great appetizer for either a casual get-together or a nice dinner party.
The dip is pretty heavy, so be sure to serve it with something sturdy like Triscuit crackers or pita chips.
Give yourself about 40 minutes to make this dish; 10 minutes to prep and 30 minutes to bake. If you plan on bringing it to a function, look into buying some cookware like Pyrex Portables (I’m not sure that Pyrex still makes these, but you can still find them online on Amazon); these baking dishes come with their own insulated carrying bags and are extremely convenient.
Judy’s Spinach Artichoke Dip
Ingredients:
- 1 (8 oz) package cream cheese, softened
- 1 c mayonnaise
- 1 package Knorr vegetable soup/dip mix
- 1 (10 oz) package frozen chopped spinach, squeezed dry
- 1 (14 oz) can artichoke hearts, drained and coarsely chopped
- 3 c shredded mozzarella
- 1/2 c parmesan cheese, grated
Directions:
- Preheat oven to 350 degrees.
- In a medium bowl, combine cream cheese, mayonnaise and soup mix.
- Stir in spinach, artichoke hearts and mozzarella.
- Spread mixture into a 2 qt. baking dish.
- Sprinkle with parmesan.
- Bake for 30 minutes.
