Blueberry Muffins Recipe

I have been a baking fiend the past few weeks in an effort to utilize the multitude of blueberries that we yielded over our two berry-picking trips to The Berry Shed in Webb City.
Luckily, I came across a “To Die For” recipe for blueberry muffins on allrecipes.com and tweaked it a bit.
Juicy berries + streusel topping = heaven!
Blueberry Muffins (makes a dozen)
Ingredients:
1 1/2 cup all-purpose flour
3/4 cup white sugar
1/2 tsp salt
2 tsp baking powder
1/2 cup vegetable oil
1 egg
1/2 cup milk
1 cup fresh blueberries
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 1/2 tsp ground cinnamon
1. Preheat oven to 400 degrees. Grease muffin cups or line with muffin liners.
2. Combine first four ingredients in a large bowl (flour through baking powder).
3. In a smaller bowl, whisk together oil, egg and milk. Pour into flour mixture and combine until well-blended.
4. Fold in blueberries. Divide mixture evenly among muffin cups. Sprinkle with crumb topping.
5. To make crumb topping: Combine last four ingredients (sugar through cinnamon); use for to mix. Sprinkle over muffins before baking.
6. Bake 20-25 minutes in preheated oven until done.
