Marinated Cucumber and Tomato Salad
I love cucumbers.
As a child, a snack for me would be a cut-up cucumber with some salt sprinkled on top, so I am always looking for recipes that include this refreshing vegetable.
I found this Marinated Cucumber and Tomato Salad recipe online this summer and have been making it at least twice a week for the past month.
After bathing for hours in this marinade, the vegetables taste tangy with just a hint of sweetness. This cool and juicy salad is a great side dish for a summer meal.
So round up the vegetables from your garden and start chopping!
Marinated Cucumber and Tomato Salad
3 medium cucumbers, peeled and sliced 1/4″ thick
3 medium tomatoes, cut into wedges
1 medium onion, sliced and separated into rings (I used a purple onion for more color)
1 c water
1/2 c distilled vinegar
1/4 c olive oil
1/4 c sugar (I use 1 TBS Splenda instead)
2 tsp salt
1 tsp ground pepper
Directions:
1. Cut vegetables and place in a large bowl.
2. Combine remaining ingredients and mix well. Pour over vegetables.
3. Cover and chill for at least 2 hours.
